- 1 pound ground beef
- 1 pound ground pork
- 1 cup fresh breadcrumbs
- 1 cup grated Parmesan cheese
- 2 large eggs lightly beaten
- 3 tablespoons fresh parsley chopped

- 1 cup warm water
- 1/4 cup olive oil
- Marinara sauce homemade or store-bought
Step 1: Mix the Meat and Ingredients
In a large bowl, combine the ground beef, ground pork, fresh breadcrumbs, Parmesan cheese, eggs, parsley, garlic, salt, and pepper. You’ll want to mix everything until it’s just combined – but be careful not to overmix, as that can make the meatballs tough. I like to use my hands for this part because it allows me to feel when everything’s just right.
Step 2: Adding the Water – Bobby’s Secret Touch
This is where Bobby Flay’s meatball recipe truly stands out. After the ingredients are mixed, you’ll add the cup of warm water. This helps keep the meatballs moist as they cook. Now, don’t worry if the mixture looks a bit wet – it should be. You'll quickly understand why this step is crucial for creating a tender, melt-in-your-mouth texture.
Step 3: Brown the Meatballs
Heat the olive oil in a large frying pan over medium heat.Once the oil is shimmering, place the meatballs in the pan, cooking them in batches to avoid overcrowding. Brown the meatballs on all sides – about 8 minutes per batch.
This step locks in the flavors, giving the meatballs a deliciously crispy exterior while keeping the inside tender and moist. After they are browned, take the meatballs out of the skillet and transfer them to a plate.
Step 4: Simmer in Marinara Sauce
Now that the meatballs are browned, it’s time to let them simmer in a rich marinara sauce. If you have time, I recommend making your own marinara from scratch. But if you’re in a hurry, a good-quality store-bought sauce works just fine.
